Most video editing programs allow you to take a still image from anywhere within your video timeline. In Windows Movie Maker just find what still image you want to capture to represent your movie then go to Tools and scroll down to Take picture from preview. Most programs will allow you to take a still image from within Edit. In imovie just go to Edit and scroll down to Create still frame -save your picture and use for a thumbnail.
